Stir Fry Veggies with Hummus

This is a fab super quick midweek meal for the whole family.

You will need:

a selection of sliced Vegetables to stir fry – e.g. onions, peppers, broccoli, baby corn, brussel tops, carrots etc

Coconut oil

Juice of 1 lemon

Hummus

Simply heat up some coconut oil in a large frying pan or wok. Throw in all the vegetables and cook until tender.

Remove from heat, squeeze the lemon juice over the top and add a big dollop of hummus! done!
