Magic Protein Balls

2 tbsp Honey or Agave
2 tbsp Cashew or Hazelnut butter or any other nut butter you fancy.
150g assorted Nuts and seeds (e.g. pumpkin, sunflower or sesame seeds, coconut flakes etc)
20g Vanilla Protein Powder (avail in my shop)
1 tsp Cayenne pepper or Chilli powder (optional)
1 tsp Cinnamon
100 – 150g mixed dried fruit, chopped (e.g. apricot, goji berries, cranberries etc)
Melt the honey / agave and the nut butter together over low heat. Add the nuts, seeds and dried fruit. Stir in the protein powder and spices and mix together well. You may need to adjust quantities slightly to make sure you have a mixture that is sticky enough to hold together but dry enough to shape into balls.
Wait until the mixture has cooled down enough so you can handle it and form the mixture into balls. I usually roll the balls in ground almonds, desiccated coconut, carob powder or toasted sesame seeds – it depends on what I have in my cupboard and what I fancy.
This mixture makes 8 large balls.
