Delicious Tomato & Bean Soup

Makes 4-6 servings
What a fantastic soup to have for dinner, so yum, filling and full of good stuff. Enjoy a bowl with a couple of slices of sourdough or ‘Life Changing Loaf of Bread’. Delicious!!
You will need:
2 teaspoons Coconut oil
1 Leak, sliced
3 cloves Garlic
1 tablespoon Fresh Thyme, chopped
3 cups Vegetable stock
3 cups Water
1 tin chopped Tomatoes
1 tin of Haricot beans, rinsed and drained
I head of Swiss Chard or Kale
2 Courgettes, sliced
1/2 teaspoon Cayenne pepper
Himalayan Rock Salt & Black Pepper
In a large pot, melt the coconut oil, add the leeks and cook until it’s softened. Add the garlic and thyme and cook for about 1 minute.
Add the vegetable stock, water, tinned tomatoes, greens, beans, courgettes and season well. Add the cayenne pepper to taste and cook until the courgettes are soft, about 15 minutes.
Remove from the heat and allow to rest before serving as is or if you prefer a smoother soup, pop it into the blender until smooth.
Serve with toast and butter if you fancy.
